My partner created these for me one morning as a special surpise after I’d mentioned that I missed French toast. Yes, it actually works, and tastes heavenly.
1/3 cup chickpea flour
2 Tablespoons brown rice flour
¾ cup rice milk
1 teaspoon ginger or cinnamon
4 – 6 slices of stale safe bread
Preheat griddle to medium heat. Whisk together all ingredients. Dip bread into mixture and then slap on the griddle. Repeat for remaining slices, stirring mixture before each slice. Fry until brown and then turn to brown the other side.

My three year old is allergic to the top 8 and to most legumes..including chickpeas. Could I use all brown rice flour or buckwheat flour?
I commend you for figuring out ways to feed your three year old new foods! That sounds like a real challenge.
The chickpea flour in this recipe is doing the job of eggs in traditional French toast. The proteins are binding together to produce the custardy texture of French toast. I don’t think that brown rice flour or buckwheat would be high enough in protein to work. Are there any other legumes that are safe for your child? Fava bean flour might work.
Oh yes..and could you clarify, what is stale safe bread?
Bread that is safe for your particular allergy, that you have let get stale. (Stale, safe bread. Not stale-safe, though it would be pretty awesome if someone came up with that.)
I wonder if flaxseed would work.
It won’t make it have a custardy texture, sorry!
cinnamon has histamine
The ingredients state “ginger or cinnamon” – for those following a low-histamine diet, the ginger is appropriate. Otherwise, cinnamon is more traditional for French toast.
