1 cup dairy and soy free shortening
1/2 cup brown sugar
1/3 cup white sugar
1/3 cup applesause
1/3 cup water
1 teaspoon vanilla
1 1/2 cups flour mix
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon ginger
1/2 teaspoon salt
3 cups rolled oats
1 cup raisins
Preheat oven to 300 degrees. Line baking sheets with parchment paper. In an electric mixer, beat shortening, water, and sugars until well mixed. Add applesauce and vanilla and beat well. Add flour, baking soda, cinnamon, and salt and mix gently. Fold in oats and raisins until evenly mixed. Drop rounded teaspoonfuls onto baking sheets. Bake 10 – 12 minutes. Cookies will not be brown, but will be done. Do not overcook. Cool on racks before eating.
