Eggs are used to produce several vaccines, including flu shots. It is very important that you double-check with your pediatrician that your child is not getting vaccines grown on eggs. Also let your pharmacist know of your egg allergy, because many presciption medications have egg protein in them.

Substituting for Eggs
The best egg substitute I’ve found for baking is the simple formula of: 2 teaspoons baking powder, 2 teaspoons canola oil, and 2 tablespoons water for each egg. I like this better than commercial egg substitutes, which tend to have a chemical aftertaste.
The best substitute in cooking is chickpea flour — there are several recipes on this site using chickpea flour in place of eggs in breading. Try the French toast — it’s amazing!
